I made zucchini pizza casserole last night. If you really really really like cheese this is for you. To be honest, next time I make it I’m only going to use the cheese in the “crust” and possibly sprinkle a lil bit on top.
- 4 C. shredded unpeeled zucchini
- 1/2 tsp. salt
- 2 eggs
- 1/2 C. grated Parmesan cheese
- 2 C. shredded mozzarella cheese
- 1 C. shredded cheddar cheese
- 1 lb. ground beef
- 1/2 C. chopped onion
- 1 can (15 ounces) tomato sauce
Shred zucchini, then place in a strainer, add salt, and let drain for 10 minutes. Combine zucchini with the eggs, Parmesan, and half of the mozzarella and cheddar cheeses. Press into a greased 13”x9” baking dish. Bake, uncovered, at 400 degress for 20 minutes. Cook beef and onion until beef is no longer pink, then drain. Add the tomato sauce and then spoon over the baked zucchini mixture. Sprinkle with remaining mozzarella and cheddar cheeses, and then bake for 20 more minutes.
