this is my egg slicer.

it occurred to me today that i own this egg slicer. it may be the last egg slicer i ever own.

it’s my adult egg slicer.

there are things we come to own over time. and at this point in my life, these are my adult things. these are the things i own as an adult.

when i was kid, the egg slicer belonged to my mom. for that matter, everything did. i didn’t realize it at the time, but i was raised in a house full of things that were hers and only transitorily mine. she owned the egg slicer, not me. that one, it was her adult egg slicer.

as a young person, out on my own, in the transient world of twentysomethingness, i may have owned an egg slicer - i don’t actually recall - but that was a transitional egg slicer, if it existed at all. it was like the rented studio apartments, the short-term-but-intense relationships, the first jobs — not lasting, able to be cast off, part of the ebb and flow of things and people, a movable life.

but now, i own this egg slicer.

the full weight of the egg slicer occurred to me today.

this is my adult egg slicer.

i am an adult. this life, these things, this is me, as an adult.

i can remember wondering, at 14, what i’d be like when i was my mom’s age.

now i know.

i am the kind of adult with an egg slicer.

this is my egg slicer.

Delicious, creamy and rich potato soup. I prefer to use half the onion. Best served in a sourdough-breadboule. Everybody I have made this for loves this recipe!

La Madeleine’s Country Potato Soup

Ingredients:

1/8 Cup Unsalted Butter

2 Leeks, Thinly Sliced

1 Large Yellow Onion, Sliced

1.5 Quart Chicken Stock

4 Large Peeled Potatoes, Sliced Evenly in 1/4” Slides

2 Sprigs Fresh Thyme

1/2 Cup Heavy Cream

1 Cup Cheddar Cheese

1/2 Cups Bacon Cooked and Diced

Salt to Taste

Directions:

In a large saucepan, add butter, leeks and onions, and cook. (Do not brown vegetables.)

Add chicken sauce, potatoes, salt and fresh thyme. Cook for 40 minutes over medium heat, stirring frequently to avoid scorching.

Add cream, bring to a boil and serve hot.

Garnish with cheddar cheese and diced bacon.

Tropical Chicken Quesadillas

Yield: 4 to 6 dinner-sized servings

1/2 teaspoon cumin

1 teaspoon oregano

1/2 teaspoon garlic powder

salt and pepper, to taste

2 boneless chicken breasts, cut into 1-inch pieces

2 tablespoons olive oil, divided

1/2 onion, sliced

1 bell pepper, sliced

1 clove garlic, minced

cooking spray

1 1/2 cups shredded Mexican blend cheese

1 cup avocado and mango salsa (see below for recipe)

8 tortillas

Instructions

Combine the cumin, oregano, garlic powder, salt and pepper in a small bowl.

Place the uncooked chicken pieces in a mixing bowl and season with the spices, stirring to evenly mix.

Heat 1 tablespoon olive oil in a large skillet. Brown the chicken until cooked through; remove from the pan and shred into smaller pieces; set aside.

In the same skillet, heat the other tablespoon olive oil then cook the onions and peppers with the salt and pepper until tender. Add the minced garlic and sauté until just fragrant, about 1 minute. Remove the peppers and onions from the pan and set aside.

Spray a tortilla with cooking spray and place, spray side down, in the skillet. On half of the tortilla, layer some cheese, chicken, onions/peppers and salsa. Fold the other side of the tortilla over the fillings and let cook until the bottom of the tortilla is golden and crispy. Flip and let cook until the other side is also golden and crispy.

Transfer the quesadilla onto a plate and cut into 4 wedges. Repeat with remaining tortillas and ingredients. Serve immediately.

Yield: 5 servings

1 mango, peeled and diced

1 avocado, peeled and diced

1 Roma tomato, seeded and diced

1 clove garlic, minced

1 jalapeño, seeded and diced

1/4 cup chopped fresh cilantro

Juice from one fresh lime

1/4 cup chopped red onion

1 Tablespoon olive oil

Salt and pepper, to taste

Stir together all ingredients in a medium bowl. Cover and let the flavors blend in the refrigerator for at least 30 minutes before serving.

cora braganza’s spinach dip recipe
This simple spinach dip recipe is always a crowd pleaser. Because this is so easy to make and can be prepared in advance, I make this for parties or office functions. I became good friends with a fellow home cook at work when I shared this recipe with her over 10 years ago. I recently made a batch for my Tita Menchu to thank her for teaching me some of her signature recipes. I got this recipe from my friend’s mom when I was in high school.

ingredients
spinach, 1 pack, 10 ounces, thawed
knorr leek recipe mix, 1 packet
water chestnuts, 1 can, chopped
sour cream, 16 ounces
baguette

preparation
1 Squeeze out excess water from the spinach. Chop the water chestnuts.
2 In the mixing bowl, combine the spinach, leek recipe, water chestnuts, and sour cream. Let the dip rest in the fridge for at least 1 hour for the flavors to develop.
3 Serve with pieces of baguette.

Add the chicken cubes and the mango pieces and toss to coat. Cover the bowl and refrigerate for at least 2 hours, or up to 4.

Preheat your grill to medium-high heat (400-450 F). Oil the grates lightly (I use the tongs to hold a paper towel that’s been dipped in oil and rub it over the grates). While the grill is heating, thread the chicken and mango cubes onto skewers (we used metal ones, but if you’re going with wood skewers, you might want to soak them in cold water beforehand).

Place the kebabs on the grill and cook, giving them a quarter turn every 2-3 minutes, until they are slightly charred on all sides and the chicken is cooked through, about 8-10 minutes. Transfer the kebabs to a platter and let rest for 5 minutes before serving.

CHEAP FOOD RECIPE: Hummus

Hummus is a great, filling food, and it is a great option for lunch if you’re sick of bringing sandwiches every day. When packing, I suggest placing it in a small container, and sticking baby carrots straight up and down, so they’re already where you need them.

1. 1 cup Garbanzo Beans (also known as chickpeas)
2. 1-2 tablespoon Olive oil
3. Garlic to taste
4. 1 tablespoon Lemon juice

Cook garbanzo beans (which you can find dried for a dollar a bag), for 45 minutes. Cool down beans. Place in food processor. Throw in olive oil, garlic, and lemon juice. Process until smooth. EAT.

This recipe is my weekend delight. Is there anyone who doesn’t love crepes? You can make them even at 4am.

CREPES

Serving – 20 crepes
4 large size eggs
2 cups milk
1-1/2cup flour
2 tablespoons butter
½ teaspoon Kosher salt

To make the crepe mixture add all the ingredients in a blender and mix for 15 min. once the mixture is ready leave it in the refrigerator for 30 minutes or overnight so you have the mix ready for Sunday morning breakfast.

Heat a medium size crepe pan until hot. Lower the heat to low to medium and grease it lightly with butter.

Pour some of the crepe mixture and tilt the pan in circular movement to coat evenly the whole pan. Bake evenly both sides of the crepe.

You can serve them with drizzled honey and top with chopped walnuts. Roll it like a cigar.

Bon appetite!

CHICKEN AND YELLOW RICE made simple!
I made...

smile-sweat-learn:

CHICKEN AND YELLOW RICE made simple!

I made this using a rice cooker, which was extraordinarily easy, and what I suggest you try as well!

Prep time: ~12 min.
Cook time: ~30 min.
Servings: 3

Ingredients:

1 Chicken thigh

1 1/3 cup Water

1 Tbsp butter/margarine

5 oz package of Mahatma Saffron Yellow Rice

8.5 oz can of peas (optional)

8.5 oz can of mushrooms (optional)

1/4 large onion, diced

Garlic salt (optional)

Instructions:

If your chicken thigh is frozen, make sure to defrost it!

While thigh defrosts, put rice, diced onion, water, and butter into the rice cooker.

Once your chicken thigh is soft, place it in the rice cooker as well.

Set your rice cooker to “Cook.” My rice cooker ran for roughly 25 minutes.

When rice cooker is finished cooking, carefully remove chicken thigh (don’t burn yourself!), then remove the skin and the bone. Chop up the meat before putting the chicken back into the rice.

Add your drained peas and drained mushrooms at this point. Also add garlic salt to taste.

Mix everything up and let it sit for five to ten minutes, and you are ready to go!

Notes:

I didn’t actually put mushrooms in this, as you might have guessed from the photo. But I think they’d taste really good! Next time I make it, I plan to add them. Also, I noticed that my chicken was not quite thoroughly cooked when I took it out to skin and debone it. This is why I made sure to let it sit in the cooker (mine stays on after cooking in order to warm things and whatnot). If your chicken is not thoroughly cooked, I suggest throwing it in the microwave for 45 seconds or so to cook it that last bit before you add it back into your rice.

Tzatziki Sauce

Goes great with Greek food.

Ingredients:

2 4-oz containers of plain Greek yogurt (you can use regular yogurt but I think the Greek yogurt is richer and has a better taste for this recipe)

1/2 tsp onion powder

1 tsp chopped garlic

1/2 of a medium cucumber, peeled

salt and pepper to taste

1. Mix all ingredients except cucumber in a medium sized bowl.

2. Grate cucumber over the container, catching all the cucumber juice that drips out. Cucumber is the major flavoring of this sauce so you want to make sure to retain all of the juice as well as the gratings.

3. Best if let set overnight.

feedwithlove:

1/2 can diced green chiles

Makes 4 Servings

Heat the oil in a large sauce pan on medium heat. Add the onion, garlic, cayenne, and cumin and cook until onions are translucent. Add potato and water. Bring to a boil. Add corn and simmer on low for 15 minutes or until veggies are all soft. Season with salt and pepper. Use a food processor or a hand blender to blend about 2/3 of the soup. Before serving stir in soy milk. Distribute in serving bowls and garnish with green chiles
