Peanut Butter Chocolate Chip Squares

1/4 c. creamy peanut butter

3/4 c. sugar 

2 large egg whites

1 tsp. vanilla

3/4 c. flour

1 tsp. baking powder

1/2 c. chocolate chips

1. Preheat oven 350 degrees. Spray 8 inch pan with cooking spray.

2. Beat p.b. and sugar until smooth.

3. Beat in egg whites and vanilla.

4. Add dry ingredients, mix.

5. Stir in chips.

6. Spread batter in pan.

7. Bake 25 min. or until toothpick comes out clean. Cool in pan, cut into 16 squares. Store in fridge.

In my house saturday means that my mom usually bakes something, or we eat something sweet and unhealthy. Well I wanted to keep this tradition, but removing the unhealthy. I saw this recipe on Cassey Ho’s tumblr and thought that with a few quirks I could make it into a dessert. Which I did, quite succesfully! Makes 1 portion.

Ingredients:

  • 1/4 cup oatmeal
  • 1 egg
  • Half a banana (ripe)
  • A handful almonds

Directions:

  • Put egg and oatmeal into a bowl.
  • Mash banana with a fork.
  • Chop almonds.
  • Add almonds and banana mash to the bowl.
  • Stir so that everything is evenly mixed.
  • Put everything into a coffee cup.
  • Warm in the microwave at highest heat for about 1-2 minutes.

Enjoy! This totally satisfied my craving for somehting sweet. The bananas made everthing sweet, while the almonds gave it a more dessert-ish feel. Apart from the consistency it tasted just like normal banana muffins! Super yummy!

Pumpkin Rice Pudding

  • 1 cup brown rice 
  • 2 1/4 c water 
  • 3 cups milk 
  • 1/2 teaspoon salt 
  • 1/4 cup brown sugar 
  • 1 teaspoon cinnamon 
  • 1/2 teaspoon ginger 
  • 1/4 teaspoon nutmeg 
  • 1/2 cup pumpkin 
  • 1 teaspoon vanilla

Directions

  1. Combine the rice and water. Bring to a boil then reduce the heat and simmer covered for 20 minutes. 
  2. Add the milk, brown sugar, salt and spices to the rice. Bring back to a boil then turn the heat to low and simmer uncovered for 20 minutes. Add pumpkin and vanilla. Cook on low for 10 minutes. Remove from the heat and let sit 15 for minutes. Serve warm with lightly whipped cream. 
  3. Can also be served cold for breakfast.

Nutella Stuffed Wontons

6 wonton wraps

3 tablespoons Nutella (chocolate hazelnut spread)

2 tablespoons melted butter or margarine

1 tablespoon icing sugar

ice cream, to serve

1. Preheat oven to 400°F. Line baking sheet with parchment paper.

2. Place 1/2 tablespoon nutella in the center of each wonton wraper. Dip your finger into some water, then trace the edges of the wrapper and seal into triangle shape.

3. Place wontons onto baking sheet and bake 5-8 minutes until golden brown and crispy.

4. Dust with icing sugar. Serve warm with ice cream & enjoy!

Cinnamon Pears and Vanilla Ice Cream

A quick summer dessert.

(serves 2)

1 very ripe pear 

1 tsp. cinnamon

1/2 tsp. nutmeg

1/4 c. water

1/4 c. brown sugar

2 c. vanilla ice cream

1. Slice pear into thin pieces.

2. In a small sauce pan combine water and spices, bring to a simmer.

3. Add pears, cook 8 min stirring occasionally.

4. Add sugar, cook 2 min stirring constantly.

5. Spoon over top of ice cream and serve immediately.

Maple Squares with Walnuts

  • 8 tbsp. unsalted butter, cubed and chilled, plus more for pan
  • 1 cup plus 2 tbsp. flour, plus more for pan
  • 1/4 cup plus 2/3 cup maple sugar
  • 3/4 cup maple syrup
  • 1 1/4 cup chopped walnuts
  • 1/4 – 1/2 tsp. kosher salt
  • 2 large eggs, lightly beaten
  1. Heat oven to 350° F. Butter and flour an 8″ square baking pan; set aside. In a food processor, process butter, 1 cup flour, and 1/4 cup maple sugar until combined; transfer to pan and press evenly into bottom. Bake until lightly browned, about 15 minutes.
  2. Whisk remaining flour and maple sugar with maple syrup, walnuts, salt, and eggs in a bowl; pour over baked crust. Bake until filling is golden brown and set, 30–35 minutes. Serve warm, in a bowl, with heavy cream poured over.

Canoli Filling

This makes a ton. Cut in half or even a quarter if you want less!

2 lb. ricotta cheese

1 lb. confectioner’s sugar

1 c. whipped cream

1/2 c. cherries

1/2 c. chopped almonds

1. Mix ricotta cheese and confectioner’s sugar.

2. Fold in the whipped cream, almonds and cherries.
