Peanut Butter Chocolate Chip Squares

1/4 c. creamy peanut butter

3/4 c. sugar 

2 large egg whites

1 tsp. vanilla

3/4 c. flour

1 tsp. baking powder

1/2 c. chocolate chips

1. Preheat oven 350 degrees. Spray 8 inch pan with cooking spray.

2. Beat p.b. and sugar until smooth.

3. Beat in egg whites and vanilla.

4. Add dry ingredients, mix.

5. Stir in chips.

6. Spread batter in pan.

7. Bake 25 min. or until toothpick comes out clean. Cool in pan, cut into 16 squares. Store in fridge.

The Best (Flourless Peanut Butter Cookies) I’ve Ever Had

You may be thinking, cookies without flour? Whaaaat? Yes, such things do exist! I was watching the Food Network channel (big shock), and was watching Claire Robinson’s 5 Ingredient Fix. I can totally relate to the whole “5 ingredient” theme considering I’m on such a tight budget. Sometimes I already have 3 out of the 5 ingredients at my disposal so I really only have to go out a buy a few things, which saves me a lot of money. One money-saving recipe are the flourless peanut butter cookies. Here is the recipe:

Ingredients:

  • 1 cup peanut butter
  • 1 cup sugar
  • 1 large egg, lightly beaten
  • 1 teaspoon vanilla extract

Directions:

  • Preheat oven to 350 degrees
  • In medium bowl, mix the peanut butter, sugar, egg and vanilla until well combined
  • Spoon a tablespoon of the combined mixture onto baking sheets. I recommend greasing the pan beforehand.
  • Flatten the mounds you have on the pan with a fork, making a crosshatch pattern. You can also add chocolate chips, coconut, etc. on top.
  • Bake until golden around edges, up to 10 min. But, keep checking to make sure they don’t get burned.
