Smashed Southwestern Red Potatoes

6 small red potatoes, cleaned 

1 tsp cayenne pepper

1 tsp cumin

1 TBSP paprika

1 TBSP red pepper flakes

2 TBSP olive oil

sour cream

1. Use a fork to poke holes in potatoes, microwave 5 min or until almost done.

2. Mix dry ingredients, add olive oil. Add mixture to potatoes.

3. Cook potatoes in microwave another minute. Add sour cream and serve. Optional: add salsa.

I’m currently cooking up a storm to get a jump start on preparing my meals for the week and thought I’d take the time to introduce a healthy and tasty side dish.

Mashed Garlic Red Potatoes

  • 3lb. bag of baby red potatoes
  • 1-2 cups milk (I use whole milk)
  • 1 tbsp. minced garlic

Make sure you rince off all potatoes prior to cooking them.  Thoroughly boil the potatoes until they are soft enough to easily slice through them with a knife or fork.  Dispose of the water and leave potatoes in the same pot that they were cooked in.  Pour in 1-2 cups of milk and add 1 tbsp. of minced garlic.  Mash them up. Salt to taste. Voila. Super easy recipe and a healthy one at that!

You can adjust this recipe all depending on how you like your potatoes mashed. I chose to cook mine whole so that I could get the full nutritional and vitamin values from the skin.  If you’re not a fan of the skin you can always peel them prior to boiling them through.  The same thing can be said for using whole milk over skim or 1%.  There are far more nutrients as well as a healthy dose of fat when using whole milk and the calorie difference is MINOR.  I also prefer my mashed potatoes with chunky bits left throughout but feel free to make them super creamy by mashing them up longer if that’s what you prefer.
